Do you remember those old days? When 'Barley' was considered as one of the most essential food items during sickness? Today, studies around the world have been providing results regarding barley's potential health benefits. This is a wonderful versatile cereal grain in terms of good nutrition. This centuries-old grain is packed with fiber, contains important vitamins and minerals, and is slim on fat. It is a great source of dietary fiber and actually contains both soluble and insoluble fiber. It contains several vitamins and minerals including Niacin (Vitamin B3), Thiamine (Vitamin B1), Zink, Selenium, Iron, Magnesium, Phosphorus and Copper. Barley contains antioxidants, which are also important for maintaining good health. Specifically, antioxidants work to slow down the rate of oxidative damage by gathering up free radicals that form when body cells use oxygen. Like all plant foods, barley is naturally cholesterol-free and low in fats. Some scientists consider (Agricultural Research Service at the Diet and Human Performance Laboratory in Beltsville) that barley may be an even better breakfast choice than oats for persons with Type 2 diabetes. They said, barley was much more effective in reducing both glucose and insulin responses than oats. According to the Journal of the American College of Nutrition and the American Journal of Clinical Nutrition, 'barley' as a soluble fiber source, would beneficially change cardiovascular risk factors and help men, pre- and post-menopausal women with moderately elevated cholesterol levels. Barley contains phytochemicals, which are natural plant-based chemicals. Some studies pointed out that phytochemicals may decrease the risk for certain diseases such as heart disease, diabetes and cancer. But certainly more research is needed to confirm these results. Well, old days are gone - now 'Barley' can be found in the market in various different forms. You can add it to soups, stews and salads. Today, it is not difficult to include barley in a healthful and delicious diet.
