Soup for Iftar
In a medium pot, add coconut cream, lemongrass, and galangal, and bring it to boil. Then add coconut milk, chicken and mushrooms. Cook for approximately 5 minutes until the chicken is done. Next, add the cherry tomatoes. Add sugar, salt, lime juice, chillies, saw leaf coriander, and fish sauce. Simmer for 1 minute, and serve with coriander leaves sprinkled on top.

Iftar with sauce: the encore edition
Mix the flour, chilli powder, 1 tablespoon PRAN sweet chilli sauce, cumin, salt and baking powder together in a bowl. Gradually whisk in 2 cups cold water until a thick, smooth batter is formed. Heat the oil in a large pan. Dip each piece of vegetable into the batter then lower into the hot oil. Fry for 3-4 minutes depending on the size of the vegetables. Remove from heat and drain on paper towels. Garnish with coriander leaves and serve with remaining chilli sauce.

Middle Eastern Drinks
Wash the dates and remove their seeds. Take a blender, add the seedless dates, pistachio, sugar and a glass of milk. Blend well for few minutes. Add the rest of the milk, ice cubes and blend all the ingredients together for 3-4 minutes. Strain the milkshake and pour the shake into the glass. Serve chilled!

Sugar free Baking
Preheat the oven to 190 °C or 375 °F or the Gas Mark 5. Grease and flour a baking tray. Sift flour together with salt, baking soda and cream of tartar. Mix in the oats and cinnamon powder. Cream butter and Sugar Free well. Fold in the flour mixture. Add the milk and vanilla essence and mix into dough. Wrap the dough in greaseproof paper or cling film and chill for about an hour in a refrigerator.

Savouries on the side
Knead together flour, semolina, salt and ghee with warm water to make stiff dough. Keep covered for thirty minutes. Divide the dough into twenty balls. Chop green chillies and coriander leaves. Heat two tablespoons of oil in a pan and add cumin seeds. Then add mincemeat and sauté till half cooked. Add a little water, as required, to prevent charring.

Crush the garlic and chilli into a fine paste. In a sauce pan, mix sugar, vinegar, water, garlic, chillies and salt. Cook the sauce mixture on low heat until sticky or for about 15 minutes. Turn off the heat and let it cool down.
